Fresh Vegan Avocado and Basil Salad Dressing

This fresh avocado and basil salad dressing is not only so flavoursome and fresh tasting, but you also won’t believe how easy it is to make! You can rustle it up in as little as 5 minutes. Not only is this salad dressing super simple to make, but it’s also a refreshing and nutritious salad dressing. Homemade salad dressing always tastes so much more delicious and nutritious than store-bought dressings. Read on to make this very easy salad dressing.

I didn’t know you can use Avocado for salad dressing!

It’s true, not everyone knows how many different vegan recipes can be made with Avocado. If you don’t cook much with Avocado, you might be thinking what can I make with Avocado? Or perhaps you have Avocados in the fridge which are dangerously close to going off and you still don’t know what to do with them. We’ve all been there! Hopefully, this recipe will give you some inspiration and show you that Avocado can be used for so many dishes!

How do I know when an Avocado is ripe?

The really important thing with this recipe is not to use the Avocado before they are nice and ripe. Wondering how to tell when an Avocado is ripe? When you squeeze it, you want it to be slightly soft, not so soft that your thumb can easily press right through the skin, so there’s still some firmness left. If you use an Avocado when it’s still too firm the taste won’t be as good, and you might struggle to get the Avocado stone out.

Food should always suit your taste.

As I say with all our recipes, they really are adaptable and you can change it as you see fit. I’m sure you are going to love this recipe as it is, but if you want to add in an extra herb, or change the basil for coriander, or add extra lime juice, then go ahead. The choice is yours. The main point of cooking, apart from the eating of course, is to be creative. What’s the worst that will happen if it’s not perfect? If you’re like us you’ll still eat it anyway! Waste not, want not!

Most of our recipes serve two as, well, there’s only two of us in the house,  but feel free to add more Avocado if you need more servings.

 1 medium Avocado
 1 spring onion
 1 garlic clove
 ¼ cup of water
 1 small handful of fresh basil
 ¼ tsp salt
 ¼ tsp black pepper
 Juice of half a lemon

Method

This recipe is so quick and easy! Simply add all of the ingredients to a small food processor or blender and blitz until smooth. You will get a nice thick consistency when you’re finished.

We love a nice thick, creamy salad dressing so this works well for us. If you like it a little runnier though, you can simply add a little more cold water (spoonful at a time) and blitz again until you get the consistency you like.
